Smoky Harissa Peanut Butter & Avocado Toasts
Recipe (makes 2 toasts)
Ingredients:
- 2 ripe avocados
- 1 tbsp olive oil
- ¼ tsp salt
- 1/8 teaspoon black pepper
- 2 tsp lime juice
- 1-2 tsp water
- 2 slices of toast
Toppings:
- 2-3 tbsp Yumello Smoky Harissa Crunchy Peanut Butter
- Spring onions
- Fresh coriander
- Crushed peanuts (optional)
Method:
In a food processor, blend together one avocado, olive oil, lime juice, salt, pepper and 1 tbsp of the water. Add more water to loosen the sauce if needed. This will depend on how creamy your avocados are.
Toast the bread slices and spread the avocado sauce on top. Cut the second avocado into slices and arrange on top of the avocado sauce.
Top with Yumello Smoky Harissa Crunchy Peanut Butter and sprinkle with spring onions, fresh coriander and crushed peanuts.
